Vinification
Our Hallè Rosè is produced from the very first grapes to ripen in our vineyards, in order to preserve the right acidity and ensure the alcohol potential is not excessive.
Once separated from the stalks, the grapes are transferred to the press for very gentle pressing, with maceration carried out directly in the press for 2 hours. Dry ice is used to maintain a very low temperature in order to best preserve the aromas of the vine. We only leave the skins and must together for a few hours to obtain the particular and delicate shade of antique pink that will distinguish the Rosé once bottled.
Now separated from the skins, the must then ferments in steel tanks at a controlled temperature. Once the tirage of our spumante base has finished, the refermentation takes place in the bottle according to the “Metodo Classico” (we were the first in the Alto Piemonte region to produce this type of wine).
Pairing
Excellent as an aperitif, or throughout the meal with fish or white meat.
